Availability of Sushi
          Perhaps one of the most interesting things about sushi in America is the way it has grown from an elitist, restaurant only meal to a grab-and-go meal found in virtually any grocery store.  Just 20 years ago, sushi could only be found in sushi restaurants where it was prepared under the careful eye of a seasoned sushi chef.  In more recent years the availability of sushi has spread due to advances in food manufacturing and well as an increasing public interest in this exotic food. 
        Sushi is now available at grocery store delis and freezer cases, cafeterias and even online.  With the creation of frozen sushi, boundaries are being broken and the convenience of frozen sushi is permeating the market.  Frozen sushi is being recognized as an innovative product which may some day be just a common as frozen pizza in American freezers.  Sushi is now known as a healthy and convenient snack which can be eaten during any time of the day or for virtually any occasion, and frozen sushi continues to follow suit with this reputation.

The percentage of childhood obesity has gone from 10% of children ages 6 to 19 in 1971, to 31% in 2000, according the American Obesity Association.  There are many health effects which occur as a result of childhood obesity; Asthma, Diabetes (Type 2), Hypertension, Orthopedic Complications, Psychosocial Effects & Stigma, and Sleep Apnea.

It is the responsibility of parents, educational institutions, child-directed media, and other adult influences to prevent this epidemic from continuing on this increasing path.  Lowering sugar intake, feeding children all-natural foods and increasing exercise is a great way to improve eating habits.  Eat sushi and be healthy!
