In
October’s newsletter we described the effect of the sushi boom over
the last 30 years, and how it has created an American style of sushi.
The grab-and-go nature of sushi is a hit and frozen sushi the next step
in this evolution. Sushi slices make delicious, healthy
appetizers, after work/school snacks or light meals. Many gourmet
foods are being transformed into frozen versions of their fresh
counterparts. Walking down the frozen aisle you will find gourmet
hors d'ourves, pizza, produce and the latest trend diet foods. All
of these items are easy to serve and eat, and sushi is no different.
High quality frozen sushi takes the best of both the fresh and frozen
worlds. Like any frozen food, frozen sushi must be carefully made
so that once defrosted, it tastes just as good as fresh.

In response to concerns about the safety of raw seafood, the FDA
has put in place regulations regarding raw fish. FDA regulations
require that all fish which is served raw must first be frozen to kill
parasites. Being able to buy frozen sushi allows anyone to have
control over when and where they will serve or eat sushi. There
are many frozen sushi products available which are made with fully
cooked seafood. The California roll is a common variety, often
made with cooked crab meat.
